Sally Schneider:
I cook recipes from past travels, or that I find in cookbooks, or get from itinerant chefs I know. Some of the best come from Peggy Markel, a role model of sorts to me, a woman who went to seek her fortune in Italy not knowing what she'd find, and ended up founding several extraordinary culinary programs – "adventures" as she calls them – in Tuscany, Sicily and Morocco...

The warmth and friendship of all the people and the beauty of the countryside stand out in my mind. It was a wonderful experience, tasting the culture of Italy – something most people only dream about – true Tuscan cooking and eating. It was a trip I'll never forget.

Peggy's Journal

Back in Tuscany after Morocco, for our fall sessions at La Cucina al Focolare, highlights were tenfold and rewarding. Our "Focolare family" is strong. We are like a long-standing Broadway show. We have a program, but we keep it fresh to entertain ourselves as well. Piero keeps us on our toes, as we said, laughing and cooking. Sandro continues to delight us with treats from the bakery and new songs in his Opera repetoire.

Pierre on the other hand, ever the philosopher, was pleased to have us come to the garden, but his enthusiasm was dampened due to a total loss of all of his plants. The summer drought took them all. 12 years of work, gone. A modest farmer, Pierre was incommunicato until he got over the shock. He soon invited us in with a great sense of understanding and humor to see his "herbal cemetery." He explained what happened and was sorry that he had nothing much to show, but his passion came through in his voice, nevertheless, when he tried to explain his job. We had lovely picnics just the same, and on the last occasion, La Cucina al Focolare made a donation for buying new plants and we helped him to re-plant! He was moved and speechless, yet his gratitude was evident in his poignant, quiet French way. Pierre has given us so much over the last ten years. It felt good to find a way to give back.
