How to Prepare

Open to seasoned cooks and novices alike, La Cucina al Folocare is fundamentally about letting one’s curiosity on the loose. How does the relaxed lifestyle of pastoral Tuscany influence the character of its cuisine? What does 'terroir' have to do with local wines and produce, resulting in the simple harmonies of Tuscan food? What are the techniques for discerning different qualities of olive oil? Bring an open spirit, boots and farm/work clothes, and a notebook. Aprons and recipes are provided.

We will stay in the same place for the duration of the program, and the kitchen, staff and schedule are the same. All walking is easy and the rhythm of the days is consistent.
